The green cauliflower or Broccoli is an edible vegetable from the cabbage family. The flowering head of it is used as a vegetable. Broccoli in the Italian language means “flowering top of a cabbage”. It is eaten raw or boiled.

You need:
  • 2 tablespoons of butter
  • ½ cup of fresh cream
  • 1 chopped onion
  • 1 peeled and chopped potato
  • Nutmeg
  • 6 cups of chicken stock. Can be purchased ready-made.
  • 3 cups of chopped broccoli.
  • Salt and pepper to taste.
To prepare the soup, take a large bowl and add melted butter to it. Cook onion in it over a medium flame. Now add potato and toss it. Then add the chicken stock and simmer for five minutes. Add broccoli and stir for another five to ten minutes over medium flame. When the potato and broccoli seem to be tender enough, then blend the mixture in a blender. Transfer into a bowl and add cream to it. Season with salt and pepper and it can be served warm.
